Vegan chocolate mug cake ingredients

There’s no complicated or strange ingredients you’ll need for this recipe – most items are ones you’ll find in a pantry. You’ll need the these ingredients to make this chocolate mug cake:

Dry ingredients for vegan chocolate mug cake

  • Self-raising flour: This is a key ingredient in this recipe – it helps to create the cakey texture. If you don’t have any self-raising flour, you can make your own by mixing together all-purpose flour and baking powder.
  • Granulated sugar: You can use any type of sugar you like for this recipe as it’s job is to give the cake the much desired sweetness. Feel free to adjust the amount of sugar according to your preference.
  • Cocoa powder: This chocolate mug cake wouldn’t be chocolatey without cocoa powder! You can use any type of cocoa powder you like but we recommend using unsweetened cocoa powder to avoid an unsweetened version to avoid a sugar overload. You can reduce the amount of sugar you add if you’re using sweetened cocoa powder.
  • Baking powder: This ingredient will help the cake to rise. Self-raising flour already contains baking powder but we like to add a little bit extra to give it an extra lift. Make sure you only add a tiny amount – too much baking powder can lead to a bitter taste or a collapsed cake!
  • Vegan dark chocolate: A super important ingredient! As the cake cooks in the microwave, it’ll melt and create a gooey and creamy chocolate center, making it even more irresistible.

Wet ingredients

  • Plant milk: This can be any type of plant-based milk – we like to use almond milk but soy, rice or oat milk all work well. You can use normal milk if you’re not vegan.
  • Oil: The oil will give this mug cake moist and fluffy texture so it’s important not to leave this out. We recommend using vegetable oil but you could also use melted coconut oil, melted vegan butter, or melted normal butter if you’re not vegan.

How to make a vegan chocolate mug cake

Combine the dry ingredients

Firstly, spoon the self raising flour, cocoa powder, granulated sugar, and baking powder into a small bowl. We found prefer to mix the ingredients in a bowl before transferring into the mug as it’s bigger and easier to mix properly. Mix well with a fork until well combined.

Pour in the wet ingredients

Secondly, add the milk and oil into the dry ingredients. Mix well until everything is combined and there are no lumps. The mug cake mixture should be smooth and creamy. It’s also normal for the mixture to be slightly bubbly – it means the raising agents are working!

Transfer the mug cake batter into a mug

Next, pour the mixture into a mug or ramekin. Spread the batter gently with a spoon to ensure it’s evenly distributed in the mug or ramekin – there’s nothing worse than a mug cake that’s cooked unevenly!

Add chocolate chunks

This chocolate mug cake is delicious on its own but if you want to take it to the next level, add some chocolate chunks or chocolate chips into the batter before cooking. Place the chunks in the batter and press some of them down gently into the middle to create a yummy chocolatey center!

Cook the mug cake

Microwave the chocolate mug cake for between 45 seconds to a minute. The cooking time will vary depending on your microwave. Our microwave is 900 watts and the cake took 45 seconds to cook perfectly. The cake is done when the top is dry and springy to touch – be careful as the mug and cake will be hot!

Rest the mug cake

Leave the cake to rest for a around a minute before serving This is important as it’ll allow the chocolate cake to cool slightly and firm up perfectly – it’ll feel like the longest minute in the world but it’s so worth it in the end!

Enjoy the mug cake

Finally, now comes the best part – eating your delicious vegan chocolate mug cake! It’s great on it’s own, but it’s even better with a scoop of vegan ice cream on the top. We also like to top it off with a splash of chocolate sauce for extra indulgence.
