  • Oil: An essential ingredient that boosts the crispiness of these roast potatoes. The oil gives these roast potatoes their beautiful golden brown color. We use rapeseed oil to make these roast potatoes but you can use any other neutral-flavoured oil for this recipe.
  • Bicarbonate soda: This ingredient helps the potatoes become more tender which in turn makes them crispier when they’re roasted.
  • Hot water: We need this for boiling. Boiling the potatoes beforehand makes them softer.
  • Vegetable stock cube: This adds a savory depth and stengthens the flavor of the potatoes.

How to make vegan garlic butter roast potatoes

Here are the steps to make these super delicious roast potatoes:

Make the garlic butter

To start, add all the garlic butter ingredients in a bowl and mix together with a fork until well combined. Set the garlic butter aside for later use or refrigerate until needed.

Prepare and boil the potatoes

Firstly, fill a large pot with cold water and bicarbonate soda. Secondly, peel and cut the potatoes, and place them in the bicarb water. Additionally, allow the potatoes to rest for 20 minutes. Then drain them in a colander and rinse them with water to wash off the bicarbonate soda. 

Next, combine hot water, salt, and the stock cube in a large pot. Bring the mixture to a boil over high heat before carefully adding the potatoes to the boiling stock and cook for 20 minutes.

Draining, cool, and coat the potatoes

Once the potatoes are done, drain them in a colander, then shake the colander to roughen the edges (cover the top of the colander to stop the potatoes from falling out) After that, place the potatoes on a large covered with parchment paper and allow them to cool for 20 minutes.

While the potatoes cool down, mix together the cornflour, salt, and pepper in a bowl. Coat the potatoes with the cornflour mixture once they’re cool.

Roast the potatoes

After that, preheat your oven to 200°C (180°C fan) and pour the oil into a large baking tray. Heat the oil in the oven for 3-5 minutes.

Carefully add the potatoes to the hot oil. Cook the potatoes for 45 minutes, flipping them every 15 minutes and adding more oil if necessary.

Add the garlic butter

After 45 minutes of cooking, remove the tray from the oven and add dollops of garlic butter to the potatoes. Return the tray to the oven and cook for a final 15 minutes.

Ingredients
  

  • 1.5 kg potatoes we used Maris Piper potatoes
  • 100 ml oil we used rapeseed oil
  • 2.5 tbsp cornflour also called corn starch
  • 2.5 tbsp bicarbonate soda
  • 3 litres hot water
  • 1 vegetable stock cube
  • Salt to taste
  • Black pepper to taste
  • Parsley to garnish

For the garlic butter

  • 6 cloves garlic minced
  • 75 grams vegan butter softened
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tsp dried sage
  • Salt to taste
  • Pepper to taste
  • Chopped chili or chili powder to taste

Instructions
 

  • Pour cold water and bicarbonate soda in a large pot, mix well
  • Peel, cut, and place the potatoes in bicarb water; leave them to rest for 20 minutes
  • Drain the potatoes in a colander, wash them to clean off the bicarb and starch
  • In a pot, combine the hot water, salt, and stock; bring the mixture to a boil on a high heat, then carefully add the potatoes and boil for 20 minutes
  • Drain potatoes in a colander, and it shake to roughen the edges of the potatoes (cover the top of the colander to stop the potatoes from falling out)
  • Place the potatoes on a large tray lined with parchment paper and leave them to cool for 20 mins
  • Preheat your oven to 200°C (180°C fan) while you wait for the potatoes to cool
  • Mix cornflour, salt, pepper in a bowl and coat the potatoes with the mixture
  • Pour oil into a large baking tray, and heat oil in the oven for 3-5 mins
  • Place potatoes in the tray and then place the tray in the oven. Flip the potatoes every 15 minutes and add more oil if necessary
  • After 45 minutes, remove the tray from oven and add dollops of the garlic butter on the potatoes. Place the tray back in the oven for a final 15 minutes
  • Garnish with parsley, serve, and enjoy!
