  • 375 ml vegetable oil
  • 250 g plain flour

  • 60 g ground turmeric powder

  • 50 g creamed coconut block not canned

To make the sauce

  • 250 ml boiling water
  • Salt to taste
  • Ground black pepper to taste
  • 1 tbsp sugar

Instructions
 

Make the curry sauce paste

  • Put aside the apple, banana and coconut for later. To make the paste, start by frying the chopped veg and the whole dry spices in the oil until they blacken. Make sure the oil is hot.
  • Remove the veg and spices. On a low heat, carefully add flour to the oil and stir until combined.
  • Pour in the turmeric, chilli and curry powders and mix for 2-3 minutes.
  • Add the apple, coconut and banana. Stir until fully incorporated. Once ready, turn off the heat and let the paste cool.

To make the sauce

  • To make the sauce, add the water, sugar, salt and pepper to a pan and stir for 2 minutes on a medium heat.
  • Add a tablespoon of the curry paste and stir. If you want a thicker sauce, add more paste. Add more water if you want a thinner sauce.
  • And its done! Pour onto some fries and enjoy! You can freeze the rest of the paste to use at a later date.
